Chicken and rosemary meat patties
Serves 4
INGREDIENTS
• 1 red onion, grated
• 500g chicken mince
• 2 cloves garlic, minced
• 2 tbsp. rosemary
• ½ lemon, zest and juice
• Salt and pepper to taste
• 2 tbsp. olive oil
METHOD
- Squeeze excess water from the grated onion and pop into a large bowl. Discard onion water.
- To the bowl add mince, garlic, rosemary, lemon juice and zest and salt and pepper. Mix well until combined.
- Heat oil in a pan and divide, roll and fry the patties until cooked through (about 5 minutes on each side).
- Can be stored in the fridge for up to 3 days.
- One serving is 1 patty.
