High protein strawberry pan pancakes 

These delicious one pan wonders offer several health benefits due to the nutrient dense ingredients.

They are high in protein aiding in satiety, boosting repair and growth and helping in weight management.

Anti Inflammatory Strawberry Oat Bar Recipe

Full of delicious whole grains, berry packed antioxidants and luscious coconut oil to hit that snack spot.

Strawberry Pancakes

High in protein and delicious fats as well as give a burst of calcium.

Serves 2

Ingredients

  • Coconut oil to fry with
  • 1-2 tsp maple syrup to taste 
  • 1 tsp ground ginger 
  • 2 tsp cinnamon 
  • 1⁄2-1 cup cashew milk or preferred milk (start slow, enough to get a smooth batter) 
  • 3⁄4 cup coconut flour 
  • 5 eggs 
  • 1 cup strawberries, sliced 
  • ½ cup coconut yoghurt 

Method

  1. Add the eggs and the coconut flour to a bowl and whisk together until smooth. Add coconut cream by the tablespoon to form a thick batter.
  2. You may not need all the entire cup of liquid depending on the size of your eggs. Add the spices. 
  3. Heat a frying pan with coconut oil over medium-high heat.
  4. Pour in batter to make pancakes in batches without over- crowding the pan. Small pancakes as pictured work best. Add more oil as needed.
  5. Serve with sliced strawberries and coconut yoghurt.

Strawberry parfait with protein

Everybody likes parfait! Coconut yoghurt packs a protein punch alone and
teamed with protein powder this little rocket will keep you going.

Serves 2

INGREDIENTS
• 2 cups coconut yoghurt (or greek yoghurt)
• ¼ cup Zing Wellbeing vanilla protein powder
• 1 cup frozen strawberries
• ½ cup granola
• 2 tbsp. cashew butter (or preferred nut butter)

METHOD

  1. Mix together coconut yoghurt and protein powder.
  2. In a cup or jar layer in strawberries and top with yoghurt and protein mix, more strawberries, granola and cashew butter.
  3. This will keep in the fridge for up to 3 days.

Benefits
Adding in some nuts and seeds will add a crunch as well as a little extra magnesium, more protein, calcium and delicious fats. Smooth 21% protein cashew butter on top and enjoy!
