Zucchini Nests
Zucchini Nests
Serves: 4
Ingredients
- 1 zucchini, grated
- 2 medium carrots, grated
- 2 medium potatoes, grated
- 2 eggs
- 50-60 g almond flour
- Salt and black pepper, to taste
- Fresh herbs, chopped
- 1 cup shredded mozzarella cheese
- 4 cherry tomatoes

Method
Preheat the oven to 170°C and line a baking tray with parchment paper.
Grate the zucchini, carrots, and potatoes.
Sprinkle a generous amount of salt and use your hands to toss.
Let it sit for 20-30 minutes.
Squeeze out as much excess moisture as possible using a clean kitchen towel.
In a mixing bowl, combine the grated vegetables with the eggs, flour, salt, pepper, and fresh herbs.
Divide the mixture into 4-5 portions and shape into small nests on the baking tray, creating a shallow well in the center of each.
Fill each nest with shredded mozzarella and top with cherry tomatoes.
Bake for 30 minutes, or until the nests are golden brown and cooked through.
Enjoy!
Meal prep tips
Fridge: Store cooked fritters in an airtight container for 3–4 days.
Freezer: Yes, these are freezer-friendly for around 2–3 months. Allow them to cool completely before freezing and separate layers with baking paper.
Reheating: Air fryer or oven is best for restoring crispness. Microwave works but will produce a softer texture.
Meal-prep tip: Grate the zucchini and squeeze out excess moisture thoroughly before mixing. This helps prevent watery fritters and gives you a firmer, crispier result.

Health benefits
Zucchini provides vitamin C, potassium and fibre while adding moisture and volume with relatively few calories.
Carrots are rich in beta-carotene, which the body converts to vitamin A. They also provide fibre and antioxidant compounds.
Potatoes provide carbohydrates for energy, potassium and vitamin C. Leaving the skin on, where practical, can increase the fibre content.
Eggs are a complete protein, choline, vitamin B12 and selenium.
Almond flour provides fibre, vitamin E, magnesium and predominantly unsaturated fats. It also makes the fritters naturally gluten-free.
Mozzarella provides protein and calcium. Reduced-fat mozzarella can lower the calories and saturated fat.
