Zucchini Caprese Salad

Zucchini Caprese Salad 

Serves 4

Ingredients

  • 2 zucchini, spiralised
  • 2 cups cherry tomatoes, halved
  • Juice of 1 lemon
  • 2 tbsp. balsamic vinegar
  • 2 tbsp. olive oil
  • 1 clove garlic, minced
  • 100g goats cheese, crumbled
  • 1 cup basil leaves
  • salt and pepper to taste
Method
  1. Combine the zucchini ribbons and cherry tomatoes in a large bowl. In a jar, combine the lemon, vinegar, olive oil and garlic. Put the lid on and shake well. Pour the dressing over the zucchini noodles and tomatoes and toss well. Place in the fridge and let marinade for at least 10 minutes.
  2. When ready to serve, transfer to a serving bowl and crumble the goats cheese and basil over top. Season with sea salt and pepper to taste and enjoy.

Benefits

Zucchini is loaded with nutrients that assist with digestion and can help balance blood sugar levels and hormones. They are high in fibre, vitamin C, magnesium and B vitamins.

Goats cheese is a great addition as it is lower in fat than other cheese so may be easier for some to digest and it contains calcium, protein, vitamin A and has even been shown to be anti-inflammatory which may assist conditions like non-alcoholic fatty liver disease.
