Ingredients
Chicken
- 600g chicken breast
- 1 tbsp olive oil
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp paprika
- 2 tsp black pepper
- Salt to taste
- 100g feta
- 2 cups risoni, cooked
Salad:
- 4 cucumbers, sliced
- 1 cup cherry tomatoes, quartered
- ½ small red onion, diced
- 1 lemon, juiced and zested
- 1 tbsp olive oil
- Fresh mint, chopped
- Salt and pepper to taste
Sauce:
- ½ cup greek yoghurt
- 1 tbsp olive oil
- 2 limes, juiced
- 2 garlic cloves
- A handful of fresh chives and basil
- Salt and pepper to taste
Serve with cooked risoni, and feta cheese

Method:
1. Preheat the oven to 200c.
Drizzle olive oil over chicken breasts and season with all the spices.
Marinade for 30 minutes.
2. Bake for 35-40 minutes until cooked through and golden brown.
3. Once the chicken is done, set aside to cool.
4. Make salad by combining all the ingredients.
5. Prepare the green sauce by blending everything until smooth. Add a bit of water if needed.
6. To serve: place rice at the bottom and add salad and grilled chicken.
7. Drizzle the sauce generously and top with crumbled feta. Enjoy!
