Thai inspired coconut curry chicken meatballs

Ingredients

Chicken meatballs:

  • 600g chicken mince
  • 1 tsp lemongrass, finely chopped
  • 3 garlic cloves, grated
  • 2 tsp grated ginger 
  • 1 egg
  • ½ cup almond flour/breadcrumbs 
  • 1 tbsp fish sauce 
  • 1 tbsp red curry paste 
  • 1 handful of coriander, finely chopped
  • Salt and pepper to taste 

Curry sauce:

  • 1 tbsp olive oil, divided 
  • ½ onion, diced 
  • 3 spring onions, sliced 
  • 1 red capsicum, sliced
  • 2 garlic cloves, minced 
  • 2 tsp grated ginger
  • 400 mls coconut milk 
  • ½ cup chicken stock
  • ½ cup red curry paste (or to taste)
  • 1 tbsp fish sauce 
  • 2 tbsp coconut sugar
  • 1 lime, zested and juiced
  • Fresh coriander, chopped

To serve:

2 cups basmati rice, cooked

Garnish:

1 Lime, cut into wedges

Fresh coriander 

Fresh chilli 

Method:

In a large bowl, combine all the listed ingredients to make the meatballs. 

Use your hands to mix until combined. 

Form into about 12-14  meatballs. 

Heat a large skillet over medium heat, add 1-2 tbsp oil. Fry the meatballs until golden brown on all sides. 

Remove the meatballs and set aside.

In the same skillet, heat 1 tbsp olive oil. 

Add the onion and cook until soft for about 3–4 minutes.

Stir in the garlic and ginger for 30 seconds. Add the capsicum, spring onions and curry paste. Cook for a few minutes. 

Add the coconut milk, chicken stock, fish sauce, and coconut sugar. 

Bring to a boil and then return the meatballs back to the skillet. 

Simmer for another 7-10 minutes, spoon up the sauce over the meatballs.

Cook until the curry is thickened to your liking. 

Finally add lime zest, lime juice, and fresh coriander.

To serve: divide rice into bowls and add meatballs with curry sauce over the rice. 

Garnish with lime wedges, coriander and fresh chilli. Enjoy!
