Sweet Potato Breakfast Waffle

Serves: 1

Ingredients

  • 3 tbsp mashed sweet potato
  • ⅓ cup shredded mozzarella cheese
  • ½ avocado, mashed
  • 1 fried egg
  • Salt & black pepper, to taste
  • Lime juice

Method

  1. Preheat a waffle maker until hot.
  2. Sprinkle half of the shredded cheddar cheese onto the waffle maker. 
  3. Add the mashed sweet potato, spreading it into an even layer, then top with the remaining cheese.
  4. Close the waffle maker and cook until the cheese is crisp and golden and the sweet potato is heated through.
  5. In a small bowl, mash the avocado with salt, black pepper and lime juice. 
  6. Once the waffle is done, transfer to a serving plate and top with mashed avocado and cooked egg.
  7. Sprinkle a bit of chilli flakes if desired. Enjoy!

 

Meal-prep tips

This is best prepared fresh because the avocado can brown and the fried egg is much nicer when freshly cooked.

For meal prep, you can prepare the sweet potato and cheese mixture ahead, then add the avocado and egg when serving.

Sweet potato meal prep: Cook several sweet potatoes at once, allow them to cool quickly and refrigerate in airtight containers.

Keep cooked sweet potato refrigerated at 5°C or colder.

How long will it keep?

For best quality, I'd use the cooked sweet potato within 3–4 days.

For the assembled meal, I'd recommend eating it the same day, particularly because of the avocado and egg.

Freezer safe? Sweet potato: YES. Cooked mashed sweet potato freezes very well. Portion it into individual serves and freeze for approximately 2–3 months for best quality.

Mozzarella: YES. Shredded mozzarella can be frozen, although its texture may be slightly different after thawing.

Avocado: NOT ideal in this finished recipe. It can be frozen, but the texture becomes softer after thawing. For this bowl, fresh avocado is preferable.

Fried egg: NOT recommended for freezing. The texture of the egg can become rubbery after freezing and reheating.

Health benefits 

Sweet potato provides complex carbohydrate, fibre and potassium, along with carotenoids such as beta-carotene, particularly in orange-fleshed varieties. The fibre can contribute to digestive health and helps make the meal more satisfying.

Avocado is the main source of healthy unsaturated fat in this recipe. It also contributes fibre, potassium and folate. Half an avocado provides a substantial amount of fibre for a relatively small portion and can help make the meal more filling.

Eggs provide high-quality protein containing all the essential amino acids, along with nutrients including choline, vitamin B12 and selenium. The egg also contributes some healthy fats and helps make this a more satisfying meal.

Mozzarella contributes a useful amount of protein and calcium, making it a nutritious way to add creaminess and flavour. 

Lime adds vitamin C and plenty of flavour for very few calories. The acidity also works particularly well with the creamy avocado and mozzarella.
