Strawberry Protein Baked Oats

Ingredients

  • 2 medium bananas
  • 1 cup Greek yoghurt (DF if required)
  • 2 cups oats
  • 2 large eggs
  • ¼ cup almond milk 
  • 1 tsp baking powder 

Toppings: 

  • 100g dark chocolate
  • ½ cup fresh strawberries

Optional: Serve of strawberry or vanilla protein powder

Method: 

  1. Preheat the oven to 175C. 
  2. In a mixing bowl, mash the bananas. 
  3. Add eggs, yogurt, milk, baking powder and oats. 
  4. Mix until combined. 
  5. Pour batter into a baking dish lined with parchment paper.
  6. Top with chocolate and strawberries. 
  7. Bake for 30–40 minutes or until golden. 
  8. Let it cool and enjoy!
