Strawberry mango yoghurt bark
Serve: 4
Ingredients
- 1 cup Greek yoghurt
- 1/2 tbsp honey
- 2 tbsp berry coulis (recipe below)
Toppings:
- 50g dark chocolate, melted
- Strawberries, sliced
- 1 ripe mango, sliced fine/ shredded (frozen or dried mango is fine too!)
Optional add a serve of protein powder
Berry coulis
- 2 cups frozen berries
- ½ tbsp honey
- Squeeze lemon juice
Add 2 cups frozen berries into a saucepan, simmer for a few minutes. Add a squeeze of lemon and honey, mash the berries with a fork a little bit. Once done, allow it to cool.

Method:
1. In a bowl, combine Greek yoghurt, honey and berry coulis.
2. Spread the mixture onto a tray lined with parchment paper.
3. Add strawberry and mango slices. Drizzle chocolate over.
4. Set in the freezer for about 2 hours
5. Break or cut into pieces and enjoy!
