Sticky Korean Chicken drumsticks
Serve: 4
Ingredients:
- 8 chicken drumsticks
- Coleslaw to serve
- Fresh chilli, sliced
- 2 Spring onions, for garnish
For the marinade:
- 2 tbsp soy sauce
- 3 spring onions, sliced
- 1/2 tbsp honey
- 2 tbsp mirin
- 1 piece of ginger, grated
- 6 garlic cloves, grated
- 2 tsp chilli flakes
- Salt and pepper

Method:
- Score the drumsticks with a sharp knife.
- Place chicken in a large bowl and add all the marinade ingredients.
- Cover and chill for as long as possible. Overnight is great!
- Once chicken is ready, heat the oven to 160C.
- Lay the drumsticks on a roasting tray and spoon over any excess marinade from the bowl.
- Roast the chicken for 35-40 mins, then baste with the sticky juices in the tin.
- Turn the oven up to 210C and continue to cook the chicken for 20 mins until charred.
To serve:
- Put coleslaw on a serving plate and arrange the chicken.
- Sprinkle spring onions and fresh chilli.
