Sticky Korean Chicken Drumsticks

Sticky Korean Chicken drumsticks 

Serve: 4

Ingredients: 

  • 8 chicken drumsticks
  • Coleslaw to serve
  • Fresh chilli, sliced
  • 2 Spring onions, for garnish 

For the marinade: 

  • 2 tbsp soy sauce
  • 3 spring onions, sliced 
  • 1/2 tbsp honey
  • 2 tbsp mirin
  • 1 piece of ginger, grated
  • 6 garlic cloves, grated
  • 2 tsp chilli flakes
  • Salt and pepper 

Method: 

  1. Score the drumsticks with a sharp knife. 
  2. Place chicken in a large bowl and add all the marinade ingredients. 
  3. Cover and chill for as long as possible. Overnight is great! 
  4. Once chicken is ready, heat the oven to 160C. 
  5. Lay the drumsticks on a roasting tray and spoon over any excess marinade from the bowl. 
  6. Roast the chicken for 35-40 mins, then baste with the sticky juices in the tin. 
  7. Turn the oven up to 210C and continue to cook the chicken for 20 mins until charred. 

To serve: 

  1. Put coleslaw on a serving plate and arrange the chicken. 
  2. Sprinkle spring onions and fresh chilli.
