Sticky chinese 5 spice chicken

Ingredients

  • 8 chicken thighs, skinless
  • 3 tbsp hoisin sauce
  • 1 tbsp soy sauce
  • 1/2 tbsp sesame oil
  • 1 tbsp honey
  • 1 1/2 tsp five-spice powder
  • A thumb-sized knob of ginger, grated
  • 3 garlic cloves, grated
  • 3 spring onions, chopped
  • 30g cashew nuts, toasted

To serve:

Cooked rice

Method:

  1. Heat oven to 190C.
  2. Slash the skin thighs 2-3 times
  3. Place the chicken thighs in a roasting pan.
  4. In a small bowl, mix together the hoisin, soy sauce, sesame oil, honey, five-spice, ginger, garlic, salt and pepper to taste.
  5. Pour over the chicken and massage to coat.
  6. Marinate for an hour or overnight is great!
  7. Once ready, bake for 30-35 mins, basting at least once.
  8. Stir in cashew nuts and sprinkle the spring onions over the chicken.
  9. Return to the oven for 5 mins.
  10. Serve the chicken with rice.
