Sticky Chicken and Rice

Sticky chicken and rice 

Serve: 2 

Ingredients: 

  • 4 chicken drumsticks
  • 1 tbsp honey
  • 1 tbsp soy sauce 
  • 1/2 tbsp olive oil
  • 1 tbsp sesame oil
  • 120g cauliflower rice (or basmati rice, cooked)
  • 90g kale, chopped
  • 2 limes, juiced
  • 100g radishes, halved
  • 1 tbsp sesame seeds

Method

Heat oven to 200C.

Put the drumsticks in a large bowl. 

Add 1 tbsp honey, soy sauce, 2 tbsp sesame oil and 1/2 tbsp olive oil. 

Marinade for 1 hour. 

Transfer to a roasting pan and bake for 25-30 mins until golden brown. 

Massage the kale with 1 tbsp olive oil for 5 mins until softening 

Drizzle over the lime juice, 1 tbsp sesame oil and 1 tbsp honey, and salt to taste. Toss in radishes and rice. Set aside. 

Serve the drumsticks over the salad. 

Sprinkle sesame seeds and enjoy!
