Spinach & Goats Cheese stuffed mushrooms

Ingredients
- 8 large flat mushrooms
- ½ cup goats cheese
- 1 tbsp olive oil
- salt and pepper
- ½ cup Frozen spinach, thawed
Method
- Preheat oven to 185C and line a baking tray with baking paper.
- Snap the stems off the mushrooms and set the cap on the prepared baking tray.
- In a food processor add the mushroom stems, goats cheese, oil, salt and pepper and blend until smooth. Squeeze excess moisture from frozen spinach and add to food processor blending quickly once more to incorporate all ingredients.
- Spoon about 1 tablespoon of the stuffing mixture into the top of each mushroom to start. Add a little extra to each mushroom until all mix is used up.
- Pop in the oven and cook for 25 minutes or until mushrooms are tender. Serve hot.
