Spicy Cauliflower Rice

Spicy cauliflower rice 

Serve: 4

Ingredients: 

  • 1 small head cauliflower, cut into small florets
  • 180g baby spinach
  • 1 tbsp avocado oil
  • 1 red onion, sliced
  • 120g halloumi, cubed (VG if preferred)
  • 1 garlic clove, minced
  • 1 thumb-sized piece ginger, grated
  • 1 tsp ground turmeric
  • 1 tbsp medium curry powder
  • 450g cooked basmati rice
  • 1 red chilli, sliced (optional) 

Method: 

  1. Boil the cauliflower for 4-5 mins over a high heat and then add the spinach.
  2. Cook for about 2 minutes. 
  3. Drain and set aside.
  4. Heat a large skillet over medium heat, saute the onion for 4-5 minutes. 
  5. Bring the heat to high and add the halloumi. Cook until the halloumi is charred. 
  6. Add the garlic, ginger, turmeric and curry powder.
  7. Cook for about 1 minute. 
  8. Stir in rice, cauliflower and spinach. 
  9. Season with salt and add chili slices if desired.
