Spicy Cauliflower Rice
Spicy cauliflower rice
Serve: 4
Ingredients:
- 1 small head cauliflower, cut into small florets
- 180g baby spinach
- 1 tbsp avocado oil
- 1 red onion, sliced
- 120g halloumi, cubed (VG if preferred)
- 1 garlic clove, minced
- 1 thumb-sized piece ginger, grated
- 1 tsp ground turmeric
- 1 tbsp medium curry powder
- 450g cooked basmati rice
- 1 red chilli, sliced (optional)

Method:
- Boil the cauliflower for 4-5 mins over a high heat and then add the spinach.
- Cook for about 2 minutes.
- Drain and set aside.
- Heat a large skillet over medium heat, saute the onion for 4-5 minutes.
- Bring the heat to high and add the halloumi. Cook until the halloumi is charred.
- Add the garlic, ginger, turmeric and curry powder.
- Cook for about 1 minute.
- Stir in rice, cauliflower and spinach.
- Season with salt and add chili slices if desired.
