Spanish Meatballs
Spanish meatballs
Serve: 4
Ingredients
- 500g lean pork mince
- Salt and pepper
- 1/2 tbsp olive oil
- 1 red onion, chopped
- 2 red chilli, thinly sliced
- 4 garlic cloves, minced
- 1 tbsp smoked paprika
- 2 x 400g cans chopped tomatoes
- 400g can butter beans drained
- A bunch of parsley, chopped

Method:
In a large bowl, combine pork with salt and pepper.
Form into small meatballs.
Heat the oil in a large skillet, add the meatballs and fry for 5 mins, until golden brown.
Push the meatballs to one side of the pan and add sauté onions and chilli.
Cook for about 5 mins until the vegetables have softened.
Add in l garlic and paprika. Stir for a minute before adding tomatoes.
Cover with a lid and simmer for 10-12 minutes.
Stir in the butter beans, and seasonings to taste.
Simmer for a further 10 mins.
Stir in chopped parsley and serve with crusty bread if desired.
