Smashed Chickpea Wrap

 

Chickpeas are high in protein so will keep you full and help maintain healthy glucose, insulin and lipid levels while warding off hunger and sweet cravings. Onions are a great prebiotic and are high in vitamin C, assisting with immune health. Baby spinach is high in fiber, which supports healthy digestion by promoting regular bowel movements. For some people, this can help prevent constipation, a common cause of bloating. The fiber in spinach acts as a prebiotic, feeding beneficial gut bacteria, which can contribute to a balanced gut microbiome and reduce bloating over time. Parsley is full of polyphenols which are anti-inflammatory. Parsley helps promote efficient digestion, supports liver health and bacterial health and may assist in relieving indigestion.

 

Serves 2

 

  • 1 ½ cup chickpeas, drained
  • 2 tbsp wholegrain mustard
  • 2 tbsp lemon juice
  • pinch of salt
  • ½ red onion, diced
  • ¼ cup fresh parsley, chopped
  • 1 cup baby spinach
  • 2 whole meal tortillas/wraps

 

Add the chickpeas, mustard, lemon juice, and salt to a bowl and roughly mash with a fork. Add the onion and parsley and mix well to combine.

Spread the chickpea smash onto the wrap. Place the baby spinach on top and roll the tortilla tightly while folding the ends in.
