San Choy Bau Rice Paper Roll

Ingredients:
Pork:
- 2 tsp oil
- 2 garlic cloves, minced
- 1 tsp grated ginger
- 500g pork mince
- 2 tbsp oyster sauce
- 1 tbsp soy sauce
- 2 tsp lime juice
- 1 tsp sesame oil
Others:
- ½ small purple cabbage
- 2 cucumbers, shredded
- 1 carrot, shredded
- 4 spring onions, sliced
- Sesame seeds
- 12 large rice paper
- Lettuce leaves

Method:
- Heat a skillet over high heat. Add oil with garlic, ginger and pork. Stir-fry for 2-3 minutes or until pork just changes colour.
- Add soy sauce, oyster sauce, sesame oil to the pork and stir-fry for 3 minutes or until cooked through. Remove from heat and allow to cool.
- Dip 1 rice paper round in water. Place it on the work surface.
- Place lettuce leaves along the edge of the round. Add cabbage, carrot, cucumber, pork, spring onion, chilli slices and sesame seeds.
- Top with more lettuce.
- Roll up, folding up edges, to enclose filling.
- Serve with favourite dipping sauce. (soy or peanut sauce)
