San Choy Bau Rice Paper Roll

Ingredients: 

Pork: 

  • 2 tsp oil
  • 2 garlic cloves, minced 
  • 1 tsp grated ginger
  • 500g pork mince
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 2 tsp lime juice
  • 1 tsp sesame oil

Others: 

  • ½ small purple cabbage
  • 2 cucumbers, shredded 
  • 1 carrot, shredded
  • 4 spring onions, sliced
  • Sesame seeds 
  • 12 large rice paper 
  • Lettuce leaves

Method: 

  1. Heat a skillet over high heat. Add oil with garlic, ginger and pork. Stir-fry for 2-3 minutes or until pork just changes colour.
  2. Add soy sauce, oyster sauce, sesame oil to the pork and stir-fry for 3 minutes or until cooked through. Remove from heat and allow to cool. 
  3. Dip 1 rice paper round in water. Place it on the work surface. 
  4. Place lettuce leaves along the edge of the round. Add cabbage, carrot, cucumber, pork, spring onion, chilli slices and sesame seeds. 
  5. Top with more lettuce. 
  6. Roll up, folding up edges, to enclose filling. 
  7. Serve with favourite dipping sauce.  (soy or peanut sauce)
