Orange & Almond Cupcakes

Ingredients

  • 4 large eggs 
  • 1 ½ cups almond flour
  • 2 ½ tsp baking powder
  • ¼ cup honey
  • 1 orange, juiced and zested 
  • 1 tsp vanilla extract 
  • 2 tbsp flaked almonds, for sprinkles 

Optional: Serve of vanilla protein powder

Method: 

  1. Preheat your oven to 175°C and line a 6-cup muffin tin. 
  2. In a mixing bowl, whisk the eggs. 
  3. Add almond flour, honey, baking powder, vanilla, orange juice, and zest. 
  4. Mix until combined, don’t overmix. 
  5. Divide the batter evenly into the muffin cups and sprinkle almond flakes.
  6. Bake for 15–20 minutes, until golden and set.
  7. Cool down completely and enjoy!
