One pot Creamy Chicken Risoni

One pot creamy chicken Risoni

Serve: 4

Ingredients:

Chicken:

  • 500g skinless chicken breast, cubed
  • 1 tbsp olive oil
  • 2 tsp paprika
  • 1 ½  tsp garlic powder
  • 1 ½  tsp onion powder
  • Salt and pepper to taste

 Risoni:

  • 1 tbsp olive oil
  • ½ small onion, diced
  • 3 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup Risoni
  • 2 cups chicken broth 

    ⅓ cup Greek yoghurt
  • ⅓  Parmesan cheese
  • 1 handful of spinach, chopped 
  • 2 tbsp chopped parsley
  • Salt and pepper to taste

Method:

1. Place chicken in a bowl and season with all the seasonings. 

2. Heat a large skillet over medium high heat, add olive oil and cook the chicken until golden brown. Transfer to a plate and set aside.

3. In the same pan, add 1 tbsp olive oil, onion & cherry tomatoes. Stir for 2-3 minutes. Add minced garlic and cook for about 30 seconds.

4. Stir in  Risoni & stir to combine before pouring the chicken broth. 

5. Season with salt and pepper. 

6. Bring to a boil, then reduce the heat to low. Cook until ready, around 6-7 minutes until the Risoni is cooked. 

7. Add Greek yoghurt, Parmesan cheese, chicken, spinach and toss all together.
8. To serve: sprinkle chopped parsley with extra Parmesan and enjoy!
