One Pan Honey Mustard Chicken

Serve: 4

Ingredients: 

Chicken: 

  • 500g boneless, skinless chicken thigh or breasts
  • 1 tbsp honey
  • 1 tbsp dijon mustard
  • 1 ½ tbsp wholegrain mustard
  • 2 tbsp lemon juice
  • 5 garlic cloves, minced
  • 1 ½ tsp dried thyme

Sauce:

  • 1 tbsp Olive oil for cooking 
  • 1 medium onion, chopped
  • 1 tsp dried thyme
  • 4 garlic cloves, minced
  • 2 tbsp honey
  • 1 tbsp dijon mustard
  • 2 tbsp light sour cream
  • 240 ml chicken broth
  • 165g mushrooms, sliced
  • 2 ½ tbsp grated parmesan
  • 1 handful fresh parsley, chopped

Serve with mashed potatoes (500g potatoes)

Method: 

1. Place the chicken thighs in a mixing bowl with the marinade ingredients. 

Mix well until chicken is well coated. Set in the fridge for at least 1 hour. 

2. Heat a large skillet over medium heat and add 1 tbsp olive oil. 

Cook the chicken until golden brown on both sides. Transfer to a plate and set aside. 

3. In the same skillet, add mushrooms and cook over high heat for a few minutes until softened. Remove and set aside. 

4. To the same skillet, add 2 tsp olive oil. Saute onion, garlic & thyme for a few minutes and then add mustard, honey, sour cream and chicken broth.

Bring it to a boil and then add parmesan. 

Stir until it starts to thicken then add the mushrooms back in. 

5. Sprinkle chopped parsley and return the chicken back into the skillet. Off the heat and ready to serve. 

6. To serve: place chicken on smashed potatoes and pour the creamy mushroom sauce over. Garnish with extra fresh parsley!
