One Pan Greek Chicken & Potatoes

Ingredients:
Tray bake:
- 800g skinless chicken thighs
- 600g potatoes, cut into wedges
- 3 tbsp olive oil
- Juice & zest of 1 lemon
- 2 tsp mixed herbs
- 1 tsp paprika
- ½ tsp ground cumin
- Salt and pepper to taste
Tzatziki:
- 250g Greek yoghurt
- ½ cucumber, grated and squeezed
- 1 garlic clove, finely grated
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tbsp chopped fresh dill
- Salt and pepper to taste

Method:
1. Preheat the oven to 220°C .
In a large baking tray, add potatoes, chicken and all the seasonings.
Use your hand to rub everything until well-coated.
Arrange everything in a single layer.
2. Roast for 40–50 minutes, turning halfway.
3. Make the tzatziki by combining all the ingredients. Chill in the fridge until serving.
4. To serve: add a generous amount of tzatziki on a serving plate and top with crispy chicken and potatoes. Garnish with fresh dill or parsley, enjoy!
