No bake raspberry peanut butter oat bars

Ingredients
- 1/3 cup peanut butter
- 1/3 cup honey
- 3 tbsp coconut oil
- 1 tsp vanilla extract
- 1 cup oats
- 1 cup oat flour
- 1 cup frozen/ fresh raspberries
- 1/4 cup water
- 1 tbsp chia seeds

METHOD
Line a loaf tin with parchment paper
Add raspberries, chia seeds, and water in a pan. Bring to a boil and simmer on low medium heat until thickened.
In a mixing bowl, add oats, oat meal, coconut oil, honey & vanilla.
Mix to combine.
If it’s dry, slowly add more peanut butter.
If too wet, slowly add more oat flour.
Put the oat mixture into the loaf tin, reserve about 1/4 cup for the topping.
Use your fingers to press it together.
Spread the raspberry over and then crumble the oat mixture on top.
Refrigerate until set. Enjoy!
