Mixed Green Salad

Serves 2

Ingredients

  • 2 tbsp. Olive Oil
  • 1 tbsp Red Wine Vinegar
  • ¼ head of iceberg lettuce, roughly chopped
  • 1 tomato, sliced
  • 1 Cucumber, sliced 
  • ½ cup pitted olives 
Method

In a small bowl, whisk together the olive oil and vinegar.

Add remaining ingredients to a large bowl and drizzle the dressing over top.

Toss until well coated. Divide onto plates and enjoy!

Benefits

Olives and olive oil are rich in fats, vitamin E, polyphenols and contain oleocanthal which has anti-inflammatory properties. Adding this to salads and veg adds a fat component which will help to balance out the meal and keep you full for longer.
