Mint slice

Serve: 9 

Ingredients: 

Base:

  • 1 cup almond flour
  • ½  cup desiccated coconut
  • 2 tbsp cacao powder
  • A pinch of salt
  • 3 tbsp melted coconut oil
  • 3 ½ tbsp maple syrup/ honey
  • 1 tsp vanilla extract
  • Optional serve protein powder

Mint filling

  • 1 cup raw cashew nuts, soaked for an hour
  • 3 tbsp coconut cream
  • ¼ cup melted coconut oil
  • 3 tbsp desiccated coconut
  • 2 tbsp maple syrup/ honey
  • 1 tsp of peppermint essence 
  • Food colour if desired or use spinach to get the green color

Chocolate topping: 

  • 125g dark chocolate 
  • 2 tbsp melted coconut oil 

Method:

Press the base mixture into the loaf pan with the back of a spoon. 

In a blender/ food processor, blend all the “mint filling ingredients” until smooth. 

In a bowl, add all the “base ingredients” and stir until well combined. 

Line a 10 x 20 cm loaf tin with baking paper. 

Pour the “mint filling” onto the base and smooth it out evenly. 

Chill in the freezer for an hour if desired or you can pour the chocolate layer immediately. 

Chill in the freezer for 1 hour until the mint filling is firm. 

Cut into pieces and enjoy!
