Low Carb Salmon Flourless Quiche
Salmon flourless quiche

Ingredients:
- 1 large sweet potato, thinly sliced
- 2 tsp extra virgin olive oil
- 30g grated parmesan cheese
- 4 medium eggs
- ¼ tsp paprika
- ½ tsp garlic powder
- 50g Greek yoghurt
- 40g frozen peas
- 40g fresh spinach
- 100g smoked salmon, chopped (VG swap for tofu or preferred protein)

Method:
Preheat the oven to 170°C.
Line a round baking pan with parchment paper.
Sprinkle half of the parmesan all over the pan and assemble the sweet potato slices to cover the pan.
In a medium bowl, combine eggs, greek yogurt, garlic powder, paprika, salt, pepper, smoked salmon, peas and spinach.
Pour the mixture onto the sweet potato pan and spread evenly.
Bake for 25-30 minutes. The quiche will be fully cooked when the edges and surface are lightly brown.
Allow the quiche to cool for about 10 minutes, then slice and serve.
