Low Carb Hawaiian Chicken Burger

Hawaiian chicken burger 

Serve: 2 

Ingredients:

  • 2 low carb wholemeal burger buns
  • 1 tomato, sliced
  • Lettuce leaves 
  • ¼ red onion, sliced 
  • 2 slices of pineapple 
  • 2 reduced fat cheese slices 

Chicken:

  • 2 chicken thighs, skinless & boneless
  • Salt and pepper to taste
  • 1/2 tbsp olive oil 

Smashed avocado: 

  • 1 avocado 
  • 1/2 lime, juiced
  • Salt and pepper to taste 

Method:

1. Season chicken thighs with salt and pepper. 

2. Pan fry until cooked through and golden. Set aside. 

3. Glaze the pineapple slices with honey and cook until charred on both sides. Set aside. 

4. In a small bowl, mash 1 avocado and add lime juice, salt and pepper. Mix well and set aside. 

5. Toast burger buns. 

6. Assemble burgers with smashed avocado, tomato slices, red onion slices, chicken, pineapple, cheese and lettuce leaves.  Enjoy!
