Low carb gyros wrap

Ingredients 

For the wrap

  • 1 zucchini, grated 
  • 1 carrot, grated
  • 1 tsp garlic powder
  • 100g grated cheese 
  • 3 eggs
  • Salt and pepper to taste 

For the chicken marinade

  • 250g chicken breast, sliced
  • 50g greek yoghurt 
  • ¼ cup parmesan 
  • 2 tsp sriracha (or preferred)
  • Salt and pepper to taste

For filling

  • ¼ cup Greek yoghurt 
  • 1 tsp chopped dill 
  • 1 garlic clove, minced
  • 1 tomato, sliced
  • Mixed salad greens
  • ½ red onion, thinly sliced

Method:

Wrap

Preheat the oven to 200C.

Use a clean kitchen towel to remove excess moisture from grated zucchini & grated carrot. 

Transfer to a bowl and mix with the eggs, cheese, garlic powder, salt, and black pepper until well combined.

Line a baking tray with baking paper and spread the mixture evenly into a thin, rectangular layer. 

Bake for 25–30 minutes. 

Allow it to cool. 

Chicken 

In a bowl, place chicken and add Greek yoghurt, parmesan, sriracha, salt, and pepper. 

Marinate for 30 minutes.

Heat a pan over medium heat and add 1 tbsp olive oil. 

Cook the chicken for 5–7 minutes until golden brown &  cooked through.

Sauce

In a small bowl, mix the Greek yoghurt with fresh dill and minced garlic cloves. Season with salt and pepper. Set aside. 

Assemble

Place the wrap on a clean surface. 

Spread the yoghurt sauce evenly over.

Add lettuce, tomato slices, red onion & cooked chicken.

Roll and slice to serve!
