Low-Carb Breakfast Wrap

Ingredients:
- 1 wholemeal tortilla wrap (GF if required)
- 2 eggs, whisked
- 50g grated mozzarella cheese
- A handful of spinach (30g)
- 4 cherry tomatoes, sliced
- 1/4 avocado, sliced
- Salt and pepper to taste

Method:
- Heat a large skillet over medium heat.
- Add a bit of oil just enough to fry the eggs to the pan.
- Once the eggs begin to set, immediately place a tortilla on top of the eggs and cook until the egg is completely set.
- Then flip the wrap over and sprinkle grated cheese, spinach, tomatoes, and avocado on one half of the wrap.
- Fold the wrap closed, let it sit for another 1-2 minutes over low heat.
