Lazy Sushi 

Serve: 8 

Ingredients:

  • 3 seaweed sheets 
  • 3 cups cooked sushi rice 
  • A drizzle of sushi vinegar  
  • 2 avocados 
  • 40g mayonnaise  
  • 400g can tuna, drained (swap for chicken or prawns if preferred)

Method:

1. Line a rectangle baking dish with cling wrap, making sure there's overhang on all sides to help with flipping later.

2. Place rice in a bowl, and combine with vinegar. 

3. Mix tuna with mayonnaise.

4. Assemble: 

  • Place 1 seaweed sheet down in the base of the dish, then spread over half the rice.

  • Add a layer of tuna & sliced avocado.

  • Place a second sheet on top of the avocado then spread evenly the remaining rice

  • Cover with the last seaweed sheet.

5. Fold over the cling wrap to cover the top and press everything down firmly.

6. Carefully flip the whole stack onto a chopping board, unwrap, and slice into squares or rectangles to serve. Enjoy!
