Italian Vegetable Schiacciata (Flatbread)

Italian Vegetable Schiacciata

Serve: 6 

Ingredients

  • 1 carrot, grated
  • 1 zucchini, grated
  • 220g potatoes, grated
  • 115g wholemeal plain flour (GF if required)
  • 60g grated parmesan cheese (DF and VG if preferred)
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1 tsp onion powder 
  • 1 tsp garlic powder
  • 70ml water
  • Salt and pepper to taste

Method: 

  1. Preheat your oven to 200C
  2. Line a 9 inch round pan with parchment paper. 
  3. In a large bowl, combine the shredded zucchini, carrot, potatoes, flour, parmesan, olive oil, onion powder, paprika, garlic powder, salt, pepper and water. 
  4. Mix well to make a smooth thick mixture. 
  5. Transfer to the prepared pan and flatten out the top, 
  6. Sprinkle extra parmesan cheese and bake for 40-45 minutes
  7. Allow to cool and slice to enjoy!
