Italian Vegetable Schiacciata

Ingredients
- 1 carrot, grated
- 1 zucchini, grated
- 220g potatoes, grated
- 115g wholemeal plain flour (GF if required)
- 60g grated parmesan cheese (DF and VG if preferred)
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 70ml water
- Salt and pepper to taste

Method:
- Preheat your oven to 200C
- Line a 9 inch round pan with parchment paper.
- In a large bowl, combine the shredded zucchini, carrot, potatoes, flour, parmesan, olive oil, onion powder, paprika, garlic powder, salt, pepper and water.
- Mix well to make a smooth thick mixture.
- Transfer to the prepared pan and flatten out the top,
- Sprinkle extra parmesan cheese and bake for 40-45 minutes
- Allow to cool and slice to enjoy!
