High protein Panna Cotta
Serve: 4
Ingredients
- 8g gelatin powder
- 45 ml water
- 200ml almond milk (or preferred milk of your choice)
- 2 tsp honey
- 1 tsp vanilla extract
- 400g greek yoghurt
Berry jam:
- 250g frozen berries
- ½ cup coconut sugar
- 1 tbsp lemon juice
Method:
- Pour water in a small bowl and sprinkle gelatin.
- Mix well and set aside until the gelatin absorbs water.
- Warm up the milk in a sauce pan, add honey and vanilla.
- Stir in bloomed gelatin until the gelatin has dissolved.
- Place Greek yoghurt in a mixing bowl and pour the milk mixture in. Whisk to combine.
- Divide the mixture into 4 small dishes
- Allow the panna cotta to cool slightly and then store in the fridge until set.

Berry jam:
- Place berries, sugar, and lemon juice in a heavy-bottom saucepan.
- Bring it to a boil.
- Reduce the heat to low and simmer until the mixture thickens. Use a fork to mash the berries if desired.
- Let it cool before using.
Serve with berry jam and fresh berries as toppings.
