High Protein Caramel Banana Slice
High Protein caramel banana slice
Serve: 6
Ingredients:
- 2 medium bananas
- 2 eggs
- ¾ cup Greek yoghurt
- 130mls almond milk
- 45g whole meal flour
- ⅓ cup protein powder
- 1 ½ tsp baking powder
- ½ tsp cinnamon
- ¼ cup dark chocolate chips
Date caramel:
- 200g pitted dates
- ¼ cup unsweetened coconut milk
- ¼ cup unsweetened almond butter
- A pinch of cinnamon
- ½ tsp salt
Caramel banana topping:
- 1 banana, sliced
- 1 tbsp honey

Method
1. Preheat the oven to 180°C and line a loaf pan with parchment paper.
2. In a mixing bowl, mash the banana, then add the yoghurt, egg, and milk. Mix until smooth.
3. Add flour, baking powder, cinnamon and protein powder. Gently mix until combined.
4. Sprinkle some chocolate chips and bake for 22-25 minutes until it’s golden on top.
5. To make the date caramel:

Soak the pitted dates in hot water for 10 minutes and reserve ¼ cup of the water.

Put soaked dates, coconut milk, almond butter, cinnamon, salt and reserved date water. Blend until smooth and ready to use.
6. Make caramel banana slices by adding banana slices & honey in a hot pan for 1-2 minutes until both sides are golden and caramelized.
7. Once the banana bread is ready, let it cool completely before spreading the date caramel on the bread ( use as much as you like)
8. Add banana slices on top of the date caramel layer. Slice and enjoy!
