High Protein Baked Blueberry Cheesecake

Ingredients
- 1 cup cottage cheese
- 1 cup Greek yoghurt
- 2 eggs
- 1/3 cup almond flour
- 1 cup blueberries, fresh or frozen
- 1/2 cup maple syrup/ honey
- 1 tsp vanilla extract
Topping:
- 100g Blueberry jam (homemade recipe below)
- 100g fresh blueberries
Berry jam recipe:
- 250g frozen blueberries
- ½ cup coconut sugar
- 1 tbsp lemon juice

Method for jam:
Place berries, sugar, and lemon juice in a heavy-bottom saucepan.
- Bring it to a boil.
- Reduce the heat to low and simmer until the mixture thickens. Use a fork to mash the berries if desired.
- Let it cool before using.
Method for cheesecake:
Preheat the oven to 160C. Line a baking dish with parchment paper.
Put all the ingredients in a blender and blend until smooth.
Bake for 45-55 minutes.
Allow to cool for 10-15 mins and then put in the fridge for at least 6-7 hours or overnight.
To serve, spread the jam all over the cheesecake and then top with blueberries.
