Healthy Strawberry Peanut Butter Cups

Healthy Strawberry Peanut Butter cups 

Serve: 6

Ingredients

Chocolate layer:

  • 1 cup dark chocolate chips
  • 2 tbsp coconut oil

Peanut butter filling:

  • 1/2 cup unsweetened peanut butter 
  • 3 tbsp almond flour 
  • 2 tbsp honey 
  • 3 strawberries, halved (frozen or fresh)

Method:

Line a muffin pan with mini liners.

Place chocolate & coconut oil in an oven-safe bowl,  then microwave until smooth.

Pour about 1-2 tsp of melted chocolate into & cover the bottom of each liner. 

Transfer the muffin pan to the freezer for a few minutes to let the chocolate set.

In another bowl, stir together peanut butter, almond flour & honey. 

Use your hands to roll into small balls.

Remove the muffin pan from the freezer and place one ball in one chocolate lined liner. 

Flatten the ball with your finger. 

Pour about 1 tbsp of melted chocolate over and cover each peanut butter cup.

Add one strawberry slice on top of each cup, then transfer the pan back into the freezer for 10-15 minutes or until set.
