Healthy Ferrero Rocher yoghurt Cups

Ingredients
Crunch Layer:
- 1½ rice cakes, crushed
- 30 g hazelnuts, chopped
- 4 Medjool dates, diced
Cream Filling
- 200g Greek yoghurt
- 2 tsp peanut butter
- 1 tsp honey/ maple syrup
- Chocolate Topping
- 60g dark chocolate
- 1 tsp coconut oil

Method
- In a bowl, add crumbled rice cakes, diced dates and hazelnuts.
- In a separate bowl, mix together Greek yoghurt, peanut butter, and honey until smooth.
- Put half the crumb mixture into a bowl/ container.
- Spoon the yoghurt mixture over the crumb layer, then top with the remaining crumbs.
- Melt the dark chocolate with the coconut oil and pour over the top.
- Refrigerate until set. Enjoy!
Meal-prep tips
This is a good make-ahead dessert/snack.
Once assembled, refrigerate in a sealed container.
For the best texture, I'd recommend eating within 2–3 days. The rice cake base will progressively soften as it sits underneath the yoghurt.
For a crunchier base, keep the crunch layer separate and assemble shortly before eating.
Freezer safe? Yes, it can be frozen, but I wouldn't freeze the rice-cake base if texture is important.
The Greek yoghurt can become slightly grainy after freezing and thawing, and the rice cakes will soften.
A better approach is to:
Prepare the date/hazelnut mixture.
Freeze individual portions.
Prepare the yoghurt layer fresh.
Add the chocolate topping when assembling.
Best meal-prep approach
For 2–4 portions, prepare the yoghurt filling and date/hazelnut mixture ahead.
Keep refrigerated and assemble individual portions as required.
The chocolate topping can be prepared in advance and allowed to set before portioning.
Storage: Keep the yoghurt-based dessert refrigerated at 5°C or below. Because it contains dairy, don't leave it sitting at room temperature for extended periods.

Health benefits
Dates provide naturally occurring sugars alongside dietary fibre, potassium and other micronutrients. They provide the sweetness and sticky texture needed to bind the crunch layer without requiring a large amount of refined sugar.
Hazelnuts provide healthy unsaturated fats, fibre, vitamin E, magnesium and some plant protein. They add crunch and help make the recipe more satisfying.
Greek yoghurt is the main protein-rich component. It also contributes calcium and, depending on the product, beneficial yoghurt cultures.
Peanut butter contributes protein, unsaturated fats, vitamin E and magnesium. It also provides useful creaminess to the yoghurt layer.
Dark chocolate provides cocoa polyphenols and minerals such as magnesium. A 70–85% dark chocolate is a good choice if you want a richer chocolate flavour with less sweetness.
