Healthy Almond Florentine
Serve: 4
Ingredients:
- 1 medium banana
- 140g flaked almonds
- 2 egg whites
- 120g dark chocolate
- 1 tsp vanilla extract, optional

Method:
- Preheat the oven to 180°C (350°F).
- Mash banana, then add almonds, vanilla and egg whites. Mix until well-combined.
- Spread thinly on a lined baking tray.
- Bake for about 15–20 min until golden.
- Let it cool down completely and drizzle melted chocolate on florentine.
- Put in the fridge for about 30 min until set.
- Break or cut to serve!
