Greek Chicken Souvlaki Bowls with Lemon Garlic Sauce

Ingredients

Greek Chicken Souvlaki

  • 750g chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 lemon, juiced
  • 4 garlic cloves, minced
  • 2 tsp oregano
  • ½ tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste 
  • 4x wholemeal pita bread

Lemon Garlic Sauce

  • 1 cup low fat Greek yoghurt
  • 2 tsp olive oil
  • 1½ tbsp lemon juice
  • 1 tsp lemon zest
  • 2 garlic cloves, finely grated
  • Salt and black pepper, to taste

Assemble 

  • 2 cups cooked rice
  • ½ small red onion, thinly sliced
  • 250g cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 50g Kalamata olives, sliced 

Garnish

Crumbled feta cheese

Fresh parsley or dill

Lemon wedges

Warm pita bread

Method

Marinate & Cook the chicken

Place chicken in a bowl, add  olive oil, oregano, lemon juice, garlic, cumin powder, paprika, salt, and black pepper.

Toss until evenly coated. Marinate for at least 30 minutes. 

Heat a skillet over medium-high heat.

Cook chicken for 8–10 minutes, turning occasionally, until golden and charred. Set aside. 

Make the Lemon Garlic Sauce

In a small bowl, whisk together greek yoghurt, olive oil, lemon juice, garlic, lemon zest, salt and pepper until smooth and creamy.

Assemble the Bowls

Divide cooked rice between bowls.

Top with grilled chicken, cherry tomatoes, cucumber, red onion, and olives.

Drizzle lemon garlic sauce and top with feta, fresh herbs & lemon wedges.
