Fancy eggs  

Serves 2

Ingredients
  • 3 tablespoons olive oil

  • 1 medium tub of mixed small tomatoes (200g)
  • 3 fresh sprigs of rosemary 
  • 4 eggs 
  • 4 tablespoons Greek yoghurt 
  • Handful fresh coriander 
Method
  1. Slug the olive oil into a medium sized fry pan and throw the tomatoes in whole. Crank the heat and as the tomatoes start to get hot poke them with a knife a few times so they burst open a little. Watch they don’t spray you with juice. 
  2. Add rosemary and cook until tomatoes are broken but soft and still juicy. Make space for eggs and crack them into the pan.
  3. Sprinkle the top of each egg with a little salt and pepper and let them cook to your desired amount. Serve in the pan topped with yoghurt and fresh coriander.
