Crunchy chicken salad

Ingredients
- 250g shredded chicken breast, cooked
- 1/2 head of lettuce
- 100g carrot, shredded
- 100g cucumber, diced
- 100g bean sprouts
- 2 spring onions, chopped
- 2 tsp sesame seeds

20g crushed peanuts
SAUCE
- 3 tbsp soy sauce
- 2 tsp minced garlic
- 1 tbsp tahini
- 2 tsp chilli oil
- 2 tsp honey
- 1 tbsp rice vinegar

Method:
- In a small bowl, combine all sauce ingredients. Set aside for later.
- In a mixing bowl, place all salad ingredients except peanuts and sesame seeds.
- Toss all together.
- Top with chopped peanuts and sesame seeds.
