Crunchy chicken salad

Serve: 2 

Ingredients

  • 250g shredded chicken breast, cooked
  • 1/2 head of lettuce
  • 100g carrot, shredded
  • 100g cucumber, diced
  • 100g bean sprouts
  • 2 spring onions, chopped
  • 2 tsp sesame seeds 
  • 20g crushed peanuts

SAUCE

  • 3 tbsp soy sauce
  • 2 tsp minced garlic
  • 1 tbsp tahini
  • 2 tsp chilli oil 
  • 2 tsp honey
  • 1 tbsp rice vinegar

Method: 

  1. In a small bowl, combine all sauce ingredients. Set aside for later. 
  2. In a mixing bowl, place all salad ingredients except peanuts and sesame seeds. 
  3. Toss all together.
  4. Top with chopped peanuts and sesame seeds.
