Crispy Chilli Chicken Spring Rolls

Ingredients:
Chicken:
- 200g chicken breast, cooked and shredded
- 1 tbsp crispy chilli oil
- 1 spring onion, chopped
- ½ tsp garlic powder
- 1 tsp sesame seeds
- 1 tsp coconut sugar
Peanut sauce:
- 1/2 cup peanut butter
- 1 tbsp sriracha
- 1 tsp rice vinegar
- 2 tsp sesame oil
- 4 tbsp tamari/soy sauce
- 1 tbsp coconut sugar
- 3 tbsp lime juice
- 1 garlic clove, minced
- 1/4 tsp ginger powder
- Pinch of black pepper
- 2-3 tbsp water (added in slowly)
Others:
- 4 Rice paper
- ½ Lettuce
- ½ Purple cabbage, thinly sliced
- 2 Carrots, grated
- 1 Cucumber, cut into sticks

Method:
- In a medium bowl, combine chicken, garlic powder, chilli oil, spring onion, sesame seeds and sugar. Set aside.
- To make peanut sauce: put all the ingredients in a blender and blend until smooth. Adjust to your liking.
- To make a spring roll: Line a rice paper on a board, add lettuce, chicken, carrot, cabbage and cucumber. Fold 2 sides and roll to an end.
- Repeat the process until finished.
- Serve with peanut sauce.
