Creamy Garlic Chicken & Potatoes

Creamy garlic chicken & potatoes

Serve: 6

Ingredients:

  • 800g skinless chicken breast, cubed
  • 2 tsp olive oil
  • 4-5 garlic cloves, minced
  • 2 tsp onion powder
  • 2 tsp mixed herbs
  • 1 ½ tsp red chilli flakes
  • 2 tsp paprika
  • Salt to taste

Crispy potatoes:

  • 700g potatoes, chopped
  • 1 tbsp olive oil 
  • 1 ½ tsp garlic powder
  • 1 tsp paprika 
  • 1 tsp mixed herbs
  • ½ tsp red chilli flakes
  • Salt to taste

Creamy sauce:

  • ½ cup unsweetened almond milk 
  • 140g light cream cheese
  • 50g grated Parmesan
  • 1 tsp garlic powder
  • 1 tsp mixed herbs 
  • Salt to taste
  • 50g shredded reduced fat mozzarella

Garnish: fresh parsley

Method: 

In a bowl, marinate chicken with all the seasonings for about 30 minutes. 

Preheat the oven to 200C.

In a large baking tray, add chopped potatoes with all the seasonings. Use your hands to rub the potatoes & seasonings until fully coated. Bake at 200C for 20-25 minutes until golden. 

In a large skillet, sear the chicken until golden brown over medium heat. 

Lower heat and pour in milk, cream cheese, parmesan, garlic powder, herbs and salt. 

Mix until smooth and creamy.

Toss in potatoes until coated with the sauce. 

Top with mozzarella cheese and cover until melted. 

Garnish with parsley and enjoy!
