Creamy chicken pesto gnocchi

Ingredients
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 3 skinless chicken breast, cubed (approx 600g)
- 2 rashers of smoked bacon
- 2 tsp Italian herbs
- Salt and pepper to taste
- chilli flakes, optional
- 500g Potato Gnocchi
- ¾ cup greek yoghurt
- 2 tbsp pesto
- ½ cup grated Parmesan Cheese
Fresh basil for garnish

Method:
Cook the gnocchi in salted boiling water according to the package directions. Drain and set aside.
In a large skillet over medium heat, add olive oil.
Add chicken, bacon, salt, pepper, chilli flakes & Italian herbs.
Cook for 4-5 minutes.
Pour in the greek yoghurt, pesto and then bring to a gentle simmer.
Add Parmesan cheese and stir until the sauce is creamy.
Add the cooked gnocchi to the skillet and toss to coat evenly.
If the sauce is too thick, add a splash of pasta water.
Season again with salt and pepper to taste.
To serve: garnish with fresh basil and extra Parmesan. Enjoy!
