Cowboy chilli
Serve: 6
Ingredients:
- 850g mince beef
- 1 medium onion, diced
- 1 green capsicum diced
- 2 tsp minced garlic
- 400g can black beans, rinsed and drained
- 400g can dark red kidney beans, rinsed and drained
- 400g cans diced tomatoes
- 1 package chilli seasoning mix
- 1-2 tbsp chilli powder (depending on preferred heat)
- 500ml beef stock
- Salt and pepper to taste

Method:
- Add the mince beef with 1 tbsp olive oil to the pot and cook over medium heat until brown.
- Strain the beef from the pot and set aside.
- Add the diced onion and green capsicum Sauté until they are tender, about 7-9 minutes.
- Add the minced garlic and sauté for another minute.
- Return the mince beef to the pot.
- Add the kidney beans, black beans, diced tomatoes with their juice, the chilli seasoning mix, chilli powder and beef broth/ water.
- Stir until everything is combined, bring the stock to a boil.
- Cover the pot and reduce the heat to medium low.
- Simmer the chilli for two hours, stirring occasionally.
- Season with salt and pepper to taste. Enjoy!
