Cowboy chilli

Serve: 6 

Ingredients: 

  • 850g mince beef
  • 1 medium onion, diced
  • 1 green capsicum diced
  • 2 tsp minced garlic
  • 400g can black beans, rinsed and drained
  • 400g  can dark red kidney beans, rinsed and drained
  • 400g cans diced tomatoes
  • 1 package chilli seasoning mix
  • 1-2 tbsp chilli powder (depending on preferred heat)
  • 500ml beef stock
  • Salt and pepper to taste

Method: 

  1. Add the mince beef with 1 tbsp olive oil to the pot and cook over medium heat until brown. 
  2. Strain the beef from the pot and set aside. 
  3. Add the diced onion and green capsicum Sauté until they are tender, about 7-9 minutes.
  4. Add the minced garlic and sauté for another minute. 
  5. Return the mince beef to the pot.
  6. Add the kidney beans, black beans, diced tomatoes with their juice, the chilli seasoning mix, chilli powder and beef broth/ water. 
  7. Stir until everything is combined, bring the stock to a boil.
  8. Cover the pot and reduce the heat to medium low. 
  9. Simmer the chilli for two hours, stirring occasionally.
  10. Season with salt and pepper to taste. Enjoy!
