Coconut Chocolate Balls

Ingredients

  • 200g sugar-free dark chocolate (VG if required)
  • 150g Greek yoghurt
  • 125g shredded coconut 
  • 50g chopped almonds/ walnuts  
  • 2 tsp honey 

Optional: Serve of choc protein powder

Method:

  1. In a medium bowl, combine yoghurt, honey, protein powder and shredded coconut. Stir well until the mixture comes together into a dough. 
  2. Form to bite-sized balls.
  3. Freeze for 10–15 minutes to firm up.
  4. Melt the chocolate and stir in chopped nuts. 
  5. Dip each ball into the melted chocolate mixture evenly. 
  6. Place them on a tray lined with parchment paper. 
  7. Refrigerate for 20- 30 minutes until fully set.
