Chopped Green Goddess Salad

Serve: 6

Ingredients: 

  • ½ head cabbage, diced
  • 2 lebanese cucumbers, diced
  • 2 spring onions, chopped

Dressing

  • 1 cup baby spinach
  • 1 cup fresh basil
  • 3 garlic cloves
  • 1 spring onions
  • 2 lemons, juiced
  • 2 tbs olive oil
  • 50g cashews
  • 60g grated parmesan cheese (DF & VG if required)
  • 1 tsp salt

Method: 

  1. In a large salad bowl, place chopped cabbage, cucumbers and spring onions. 
  2. Add all the dressing ingredients to a blender and blend until smooth. 
  3. Pour the dressing over the vegetables and toss to combine.
  4. Enjoy immediately!
