Chopped Green Goddess Salad

Ingredients:
- ½ head cabbage, diced
- 2 lebanese cucumbers, diced
- 2 spring onions, chopped
Dressing
- 1 cup baby spinach
- 1 cup fresh basil
- 3 garlic cloves
- 1 spring onions
- 2 lemons, juiced
- 2 tbs olive oil
- 50g cashews
- 60g grated parmesan cheese (DF & VG if required)

1 tsp salt

Method:
- In a large salad bowl, place chopped cabbage, cucumbers and spring onions.
- Add all the dressing ingredients to a blender and blend until smooth.
- Pour the dressing over the vegetables and toss to combine.
- Enjoy immediately!
