Chocolate Blackberry Chia Pudding

Chocolate blackberry chia pudding

Ingredients

Cherry Chia Jam:

  • 200g frozen blackberries (or preferred berries)
  • 1 tbsp honey 
  • 1 tbsp lemon juice

Chocolate Chia Pudding:

  • 1/4 cup chia seeds
  • 1/4 cup cocoa powder
  • 2 tbsp honey
  • 1.5 cups unsweetened almond milk 
  • 1 cup greek yoghurt
  • Dark chocolate chips
  • Cocoa nibs 

Optional serve choc protein powder

Method:

Blackberry jam: 

  • Add frozen blackberry, honey and lemon juice to a saucepan over medium heat. 

  • Stir occasionally for 10-15 minutes until thickened. 

  • Remove from heat and let it cool down. 

For the chia pudding:

  • In a bowl, combine chia seeds, cocoa powder, protein powder, honey and milk. 

  • Mix until fully combined. 

  • Cover and set in the fridge for at least 3 hours. 

Serve: 

  • Put chia seed pudding into a serving glass/ jar. 

  • Add greek yoghurt and blackberry jam. Layer them beautifully. 

  • Top with cocoa nips and enjoy!

Greek yoghurt increases the protein content and provides calcium and probiotics (depending on the yoghurt variety), supporting muscle maintenance, bone health and digestive wellbeing.

Cocoa powder and dark chocolate contain flavanols, which have been associated with cardiovascular health and improved antioxidant protection. 

Cocoa nibs provide additional minerals including magnesium and iron.
