Chicken Waldorf salad

Serve: 6 

Ingredients: 

  • 2 cooked chicken breasts, shredded (300g) (VG swap for preferred protein or omit)
  • 1 stalk celery, thinly sliced
  • 1 apple, diced 
  • 1 cup grapes, halved
  • 3/4 cup toasted pecan, chopped 
  • 3/4 cup light mayonnaise (GF if required)
  • 1/4 cup greek yoghurt
  • 1/4 lemon, juiced
  • Salt and pepper to taste 
  • Lettuce leaves to serve

Method: 

In a large mixing bowl, place chicken, apple, celery, grapes, pecans, mayonnaise, and gree yoghurt. Mix until well combined.  Add salt, pepper and lemon juice. 

Serve on lettuce leaves!
