Chicken Waldorf salad
Serve: 6
Ingredients:
- 2 cooked chicken breasts, shredded (300g) (VG swap for preferred protein or omit)
- 1 stalk celery, thinly sliced
- 1 apple, diced
- 1 cup grapes, halved
- 3/4 cup toasted pecan, chopped
- 3/4 cup light mayonnaise (GF if required)
- 1/4 cup greek yoghurt
- 1/4 lemon, juiced
- Salt and pepper to taste
- Lettuce leaves to serve

Method:
In a large mixing bowl, place chicken, apple, celery, grapes, pecans, mayonnaise, and gree yoghurt. Mix until well combined. Add salt, pepper and lemon juice.
Serve on lettuce leaves!
