Chicken Parmi Pasta Skewers

Serves: 8 skewers (approx 2 per person)

Ingredients

  • 2 chicken breasts (approx 300g)
  • 40-48 wholemeal penne pasta pieces, cooked 
  • 1 cup pasatta sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Wooden skewers

Garnish: fresh basil, chopped

Method

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking tray with parchment paper.
  3. Season and grill or pan fry the chicken as desired. 
  4. Let it cool and slice into bite- size pieces.
  5. Thread alternating pieces of chicken and cooked penne onto wooden skewers.
  6. Place all the skewers on the tray.
  7. Brush the top of each skewer with pasatta sauce and sprinkle with mozzarella cheese.
  8. Bake for 8–10 minutes, until the cheese is melted. 
  9. Garnish with fresh basil and enjoy! 

 

Meal prep tips

Fridge: Store cooked skewers in an airtight container for 3–4 days.

Freezer: The cooked chicken, pasta and passata are generally freezer-friendly for up to 2–3 months. The mozzarella may become slightly less creamy after freezing but should still work well.

Reheating: Reheat until thoroughly hot. An air fryer or oven will help crisp the chicken and cheese, while a microwave is quickest.

Meal-prep tip: If using wooden skewers, remove the skewers before storing if space is limited. If assembling before cooking, soak wooden skewers in water first to reduce the risk of burning.

Health benefits

Chicken breast provides high-quality, lean protein to support muscle maintenance, recovery and satiety. It also provides selenium, vitamin B6 and niacin.

Passata provides vitamin C, potassium and lycopene. Cooking tomatoes can make lycopene particularly bioavailable.

Mozzarella provides protein and calcium. Using reduced-fat mozzarella can lower the fat and calorie content.

Pasta provides carbohydrates for energy. A wholemeal or higher-fibre pasta would increase the fibre content.

Fresh basil adds flavour and antioxidant plant compounds with very few calories.
