Ingredients
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 small head of cauliflower, grated or processed into rice-sized pieces
- 1 cup broccoli florets, chopped
- 1/2 tsp smoked paprika
- 1/4 tsp turmeric
- Salt and pepper to taste
- 2 large eggs
Method
- Heat the olive oil in a large frypan over medium heat. Add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic, cauliflower, and broccoli to the skillet.
- Season with smoked paprika, turmeric, salt, and pepper. Stir well to combine and cook for 8-10 minutes, stirring occasionally, until the vegetables are tender and lightly golden brown.
