Cauliflower and Broccoli Breakfast Hash

Serves 4

 Ingredients

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small head of cauliflower, grated or processed into rice-sized pieces
  • 1 cup broccoli florets, chopped
  • 1/2 tsp smoked paprika
  • 1/4 tsp turmeric
  • Salt and pepper to taste
  • 2 large eggs

Method

  1. Heat the olive oil in a large frypan over medium heat. Add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic, cauliflower, and broccoli to the skillet.
  2. Season with smoked paprika, turmeric, salt, and pepper. Stir well to combine and cook for 8-10 minutes, stirring occasionally, until the vegetables are tender and lightly golden brown.
  3. While the hash is cooking, you can prepare the eggs as desired. For a simple touch, fry the eggs in another pan or cook them sunny-side-up or scrambled. Alternatively, you can mix the eggs directly into the hash and scramble them with the vegetables.
  4. Once the hash is cooked and the eggs are ready, serve the hash on plates and top with the eggs.
