Broccoli Chicken Crust Pizza

Ingredients:
- 2 small broccoli, cut into florets
- 450g lean chicken mince
- 2 eggs
- ¾ cup shredded reduced fat mozzarella
- ½ cup grated parmesan
- 2 garlic cloves, minced
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp Italian herb
Toppings:
- 1 cup shredded mozzarella
- Chopped capsicums, onion

Method:
Preheat oven to 210C.
Line 2 large rimmed baking sheets with parchment paper.
Steam broccoli florets until fork tender. Once cool, chop into small pieces.
Transfer to a clean towel and squeeze out the excess liquid.
In a large bowl, add chicken mince, broccoli, eggs, mozzarella, grated parmesan, garlic and seasonings. Mix until combined.
Line a baking sheet with parchment paper.
Gently spread out into a round/rectangle shape about 1 inch thick.
Bake for 20-22 minutes or until golden brown on top.
Remove the baking sheet and sprinkle more mozzarella, capsicums & onion.
Broil for a few minutes or until the cheese is melted.
Slice and enjoy!
